There’s a particular kind of craving that only shows up when the kids are finally down and you realize dinner wasn’t the sweetest part of the day. I used to think a s’more without a campfire was just a sad graham cracker. Then I made these.

These smashed date s’mores have everything you love about the classic — chewy dates, gooey marshmallow, a chocolate drizzle, and a crunchy cracker — in a no-bake treat that comes together in minutes. Five ingredients. No oven. About 94 calories a bite, which is the kind of dessert that lets you have one without negotiating with yourself.
I first saw them shared by Melissa’s Healthy Kitchen, and I knew I had to test them in my own kitchen. The only change: I’m gluten-free at the moment, so I swapped the graham crackers for Simple Mills Sweet Thins. They taste just like the classic cracker, so you keep all the s’mores vibes with none of the gluten.
Why this works
Medjool dates do the sugar work for you — they’re naturally sweet and soft enough to smash flat without any added syrup. That means the whole thing stays light: the marshmallow fluff gives you the goo, the cracker gives you the crunch, and a thin coat of melted chocolate ties it together. It’s the good kind of simple: one plate, one knife, zero cleanup drama.
Ingredients
You need exactly five things, and four of them live in your pantry already.
- Medjool dates — the base. Naturally sweet, soft, and caramel-like. Use fresh, soft ones for the best texture; if yours are a little dry, soak them in warm water for 5 to 10 minutes and pat them dry.
- Marshmallow fluff — the gooey filling. I used a dairy-free organic brand, but regular marshmallow fluff works fine.
- Chocolate chips — melted and drizzled on top. I went with reduced-sugar chips to keep things lighter, but any semi-sweet or dark chips work.
- Coconut oil — just a small amount, to keep the melted chocolate smooth and easy to drizzle.
- Graham crackers — the crunch. I used gluten-free thins, but regular graham crackers work just as well if you don’t need this to be gluten-free.

How to make them
25 minutes start to finish — including the 15 minutes the chocolate needs to set. Here’s the whole plan:
- Smash the dates. Slice each of the 6 medjool dates in half lengthwise and remove any pit. Line a small baking sheet or plate with parchment paper. Press each date half flat with a second sheet of parchment, cut-side up, so they spread out like little pancakes and don’t stick to your hands.
- Add the goo. Spoon about 1 tablespoon of marshmallow fluff onto each smashed date — 12 tablespoons total.
- Cap it. Press one gluten-free thin (or graham cracker) into the marshmallow on each date. You’ll use 12, plus 1–2 more, crushed, for topping.
- Melt the chocolate. Combine the ⅓ cup of chocolate chips with ½ teaspoon coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth.
- Drizzle, crumble, chill. Drizzle the chocolate over each s’more, covering as much of the cracker as you can. Sprinkle with the crushed crumbs, then refrigerate for 15 to 20 minutes, until the chocolate is set.
Eat them right away, or keep them for later — more on that below.
How to store them
These keep really well, which makes them a good make-ahead treat.
- Fridge: in an airtight container for up to 5 days. The chocolate stays firm while the dates and fluff stay soft and gooey.
- Freezer: freeze them in a single layer until solid, then move them to a freezer-safe container or bag for up to 3 months. Eat them straight from the freezer for a firmer, chewier bite, or let them sit out for a few minutes first.
FAQ
Can I use regular graham crackers? Yes. I went gluten-free with the thins, but regular graham crackers work just as well.
What kind of dates should I use? Medjool dates, because they’re large, soft, and naturally caramel-like. If yours are dry, soak them in warm water for 5 to 10 minutes and pat them dry before using.
Can I freeze them? Yes — up to 3 months in a freezer-safe container. Straight from the freezer they’re firmer and chewier; let them soften for a few minutes if you prefer.
How long do they take? 10 minutes of active work, 15 minutes chilling, 25 minutes total. The recipe makes 12.
A note from my kitchen
I tested this on a weeknight, the way you’ll probably make it — one plate, one knife, chocolate in the microwave while the kids did their homework. It held up. It’s the kind of recipe that keeps a batch in my fridge all the time, and honestly, that’s the test: if a dessert this good takes less time than it takes to defrost dinner, it earns a spot in the rotation.
Trade-It Tip: No reduced-sugar chips? Use your regular semi-sweet or dark chips — the recipe doesn’t care. And no gluten-free thins? Regular graham crackers, no questions asked.
If it doesn’t fit a Tuesday night, it doesn’t get published.
